Our Veggie Recipe of the Week: Halloumi burgers

Easy to make, very little cooking involved, and much much kinder to our bovine buddies!  



  • Ingredients

  • ·         1 Brioche Bun
    ·         2-3 thick slices of halloumi cheese
    ·         1 handful of rocket leaves
    ·         1 tsp chilli jam
    ·         1 tsp green pesto
    ·         1tbsp mayonnaise
    ·         Red jalepeno slices
    ·         2 Chestnut mushrooms, sliced
    ·         Pinch of chilli flakes
    ·         Dash of Ketchup


Method

Place sliced mushrooms and halloumi in a preheated frying pan, no oil required.  Leave on a medium heat for 5 minutes. 

Meanwhile, slice the bun and spread chilli jam on the base, followed by the pesto and mayonnaise on the lid.


Put a clump of the rocket leaves on the base (the chili jam will help it stick in place). 


Back to the pan, sprinkle chilli flakes on the slices of halloumi and mushrooms and turn once the halloumi is starting to brown. 


Increase the heat and keep turning for a few minutes until the cheese almost looks burnt. Then remove mushrooms and halloumi from the pan and place on top of the rocket leaves, adding the jalepeno slices and a blob of ketchup.


Pop the lid on, push the whole thing together and devour.
